Panzanella or Pane intinto

It is important to use fresh and genuine ingredients and extravirgin olive oil in the preparation of this recipe. Ingredients: stale bread (preferably Tuscan bread), 1 onion, 2-3 tomatoes, 1-2 cucumbers, basil, extravirgin olive oil, salt, pepper. All the quantities of the ingredients depend upon the quantity of dried bread used in the preparation.

Put the bread in a container full of water, keep it in the water till it is well softened. Squeeze it accurately. Cut the tomatoes, the cucumbers and the onion in small pieces and add them to the bread. Flavour with salt, pepper and extravirgin olive oil. Put it in the refrigerator for 1 hour before serving it.
